“With tight county budgets prevalent around the country, one of the daily challenges of all jails/prisons is to continue to provide adequate meals to all inmates to include special diets such as kosher meals, low salt, soft diets, etc and keep costs down. I found when I was a deputy warden that breakfast meals consisting of cold cereal were more costly than the hot meals that included eggs or pancakes. Many facilities are eliminating juice, coffee, and tea to cut costs. Also, feeding inmates two meals a day instead of three meals helps to cut costs. The fact is that this will continue to be a budget problem for some time to come.”
